In the Vineyard

Following bud break and the beautiful addition of green to our vineyard, flowering has begun. Small flower clusters are appearing at the ends of the young shoots. Pollination and fertilization will take place a few weeks after these initial clusters have appeared, resulting in a grape berry with one to four seeds. During fertilization, the pollen fertilizes the ovary, which produces seeds that the grape berry will encapsulate. We hope for good weather this time of year, because detrimental weather such as heavy rain or wind can severely affect the fertilization process, resulting in poor fruit set.


A Mitchella Baby!

Congratulations to Terri, Mitchella’s Controller, and Danny Segura on the birth of beautiful Quincy Maria!  She was born on  March  9 at 8:06am weighing 8 lbs. 4 oz. and measuring 21 inches long.


Mitchella's Race Corner...

The first race of the season for the Mitchella-sponsored Porsche was held May 13-15, 2016 at the Laguna Seca Raceway.  The team placed 4th on Saturday and 2nd on Sunday.  This was the Porsche’s first time out since the crash Father’s Day weekend last year.  The next race will be held at Sears Point Sonoma Raceway on June 17, 18, and 19.


Did You Know?

How do you know if a wine is corked?  Don’t look at the cork or the “wine crystals” on the bottom of the cork.  These crystals, called tartrates, are a natural byproduct of some wines and are harmless. They are NOT signs of a corked or “bad” bottle. The way to  identify a corked or flawed bottle of wine is to smell and/or taste it.  A corked bottle of wine can smell musty, moldy, like cardboard or a wet dog, it will taste flat, dull, fruitless and possibly astringent. Wine that has been  contaminated by cork taint, TCA—trichloranisole, occurs in a small percentage of all wines.

Cooked wine, is a wine that has been overheated, warm temperatures will dull the wine's flavor and make it taste stewed, baked or even burnt. As we enter the summer months it is important to watch the temperature when you are traveling or out wine tasting, it doesn’t take long for wine to become “cooked.”  Bring an ice chest along for storage.

 Our lovely bright pale yellow Viognier has aromas of tropical fruit and lychee with hints of violet, and jasmine blossoms. It has a delicious palate with elements of white peach, apricot, and a little perfume on the finish, with overall richness on a dry and balanced frame.  $24

Pairs  with Fiscalini San Joaquin Gold, Honey Bee, Honey Goat, Mango Ginger Stilton, Purple Haze, Mt Tam, Grilled Jalapeno Poppers and Crab Cakes (recipe follows). 


Crab Cakes

Ingredients
1/4 C mayonnaise                        
1/4 C minced onion

2 large eggs, lightly beaten          
1/2 tsp.Worcestershire sauce

1/2 tsp. dry mustard                    
1/4 tsp. salt                                                      

1/4 tsp. cayenne pepper        
1 lb. lump crabmeat, picked over                  

1 C finely crushed soda crackers
2 Tbsp. unsalted butter                                  

1/4 C vegetable oil              
Lemon wedges, for serving

Directions

In a large bowl, combine the mayonnaise, onion, eggs, Worcestershire sauce, dry mustard, salt and cayenne. Fold in the crabmeat and 1/4 cup of the cracker crumbs. Shape the mixture into 16 cakes about 1 inch thick. Coat the crab cakes with the remaining cracker crumbs and transfer to a baking sheet lined with wax paper.
In a large skillet, melt 1 tablespoon of the butter in 2 tablespoons of the oil. When the foam subsides, add half of the crab cakes and cook over moderate heat until golden and crisp, 2 to 3 minutes per side. Drain the crab cakes on paper towels, then keep warm in a low oven. Repeat with the remaining 1 tablespoon of butter and 2 tablespoons of oil and cook the remaining crab cakes. Serve with lemon wedges.
Can be prepared and refrigerated overnight before cooking.
