In the Vineyard
Harvest is upon us, it seems like it was just spring. Everyone agrees that the quality of the fruit we ferment is paramount in influencing the quality of wine produced. One of the most important tasks in the winemaking process, starts on the sorting table. After the grapes are picked, they are slowly dropped into a hopper that drops the fruit onto a stainless steel table, which vibrates the fruit down to the Crushers/Destemmer. As the fruit is going down the table we, carefully, remove any unripe and damaged fruit, plus any MOG (Material Other than Grapes), like leaves, twigs, bugs, bits of stems, occasional lizards and rocks, all things that could potentially add flavors that we do not want in the finished product. Did You Know - Sulfites?
You may have heard people complain of red wine headaches caused by sulfites. It is true that some people have negative reactions to sulfites; about one percent of all people have this sensitivity. However, the "red wine headache" is not caused by sulfites. In fact, white wines usually have more sulfites than red, and orange juice and dried fruits like apricots have significantly more! The “red wine headache” is more likely caused by histamines on the red wine grape skin or from tannins that are present in the skin or seeds of red wine, and, of course, by the alcohol from one too many glasses of wine.
So what are sulfites? Basically, sulfites are chemical compounds containing SO2 (sulfur dioxide). They have been used for thousands of years in the winemaking process: there are actually stories dating back to ancient Rome about using sulfur to clean vessels containing wine. Today, sulfites are sometimes added to the wine during the aging process, and usually before bottling, as a natural preservative. Sulfur dioxide reacts with oxygen, which helps prevent oxidation. Without added sulfites, a wine would only last about a year and a half before spoiling.
